Welcome to the first full week of June!

All of our “summery” summer stuff starts this week:  the movies, going to the pool, all of our outdoor stuff on our summer bucket list, and lots of Mama-Muffin days!

This also is my opportunity to try new recipes and rediscover old favorites (and even try my hand at crafting a new recipe or two!).

All of that happens this week in the meal plan.

Saturday:  Sheet Pan Shrimp Stir Fry with Oyster Sauce, rice, egg rolls

Sunday:  mini meatloaves (using Oma’s recipe but scaled down to muffin-size), green beans, mashed potatoes (thinking putting the mashed potatoes atop like cupcakes and frosting)


Monday:  grilled cheese and La Madeleine’s tomato-basil soup (otherwise known as the recipe that sparked a war)


Tuesday:  taco burgers (a recipe I dreamed up in my mind), chips, salsa

Wednesday:  chicken spaghetti, garlic toast

Thursday:  leftovers or hot dogs

Friday:  mini pizzas, corn

Saturday:  fried rice, egg drop soup

Sunday:  Dr. Pepper pulled pork sandwiches (made using the same recipe as the Root Beer Pulled Pork but changing out for Kroger Real Sugar Soda’s Dr. Pepper “knockoff”), coleslaw, chips

Meal Plan Monday

I feel a bit guilty over the past two weeks’ meal plans.  While they included awesome new recipes, I tended to focus on only one or two sources.  So, this week, I’m branching out again to the depths of the Dropbox files.

Here’s what I did:  I asked Josh for five letters.  Then, I looked though my Dropbox files for blogs that started with each of those letters.  The results are below.

Truly, I love the fact that I saved so many recipes to my Dropbox files, but I have been getting complacent as I go through them (namely, I haven’t been updating them from the blogs).

That is my new goal:  to go to the blogs I already have Dropbox folders for and update them.

But I am already out of space!

So, here are the pickins’ for the week:

Saturday:  Deep South Pinto Beans and Rice (Deep South Dish), cornbread

Sunday:  Bacony Chicken and Rice Bake (Deep South Dish), green veg

Thursday:  leftovers or hot dogs

Friday:  pizza

Saturday:  Chicken Croquettes (with a sauce…not sure which one yet) (Macaroni and Cheesecake), green veg, fruit

Sunday:  Cashew Sweet and Sour Pork (Our Best Bites), rice, egg roll

Meal Plan Monday: Super Bowl/Valentine’s Edition!

I know.  I’ve been AWOL.  The last few weeks have been interesting, to say the least.  Out of town to Dallas, then adjusting to a new schedule (and stresses) at work, and Muffin being sick the past few days.  With the exception of the Dallas trip, I can’t pretend the other things were a positive experience.

But back to MPM posts (and a WPW post that is a LONG time coming!)…

This week is the convergence of three special days (if you count my nine day meal schedule as a “week”).  Yesterday, was the Super Bowl, tomorrow is Mardi Gras, and Valentine’s Day is next Sunday.  It’s not a week to shirk on fun or food.  Next week, I hope to share Josh’s fabu-luscious lasagna recipe, as he has promised to make it for me for Valentine’s Day weekend.

Saturday:  leftover pizza (Josh worked late)

Sunday:  Chick-Fil-A-style chicken nuggets, BBQ little smokies sausages, rotel dip and chips, chips and dip, fries, Tubbs Xtreme Praline King Cake

Monday:  Slow Cooker Cashew Chicken (Six Sisters’ Stuff), rice, eggrolls

Tuesday:  “cheater” Red Beans and Rice (Popeye’s style) and leftover king cake (possibly with bread and salad)

Wednesday:  Farmer’s Casserole (Recipe Girl)

Thursday:  leftovers

Friday:  something pizza related

Saturday:  Josh’s famous lasagna, salad, bread

Sunday:  Valentine’s Day cheese plate

We Plan Wednesday: The September 2015 Menu

We Plan Wednesday

When I sat down a few weeks ago and planned out the menu for the remainder of the year, I did so in an attempt to sketch out something useful for the remainder of 2015, knowing that once school started things were going to be busy.

Note that I said, “sketch.”  This monthly plan is not intended to be the end all and be all.  If I can’t manage to follow the weekly meal plan 100% of the time, I DEFINITELY can’t expect to do so for the monthly plan.  Life and poop happens.

That being said, I think this advance planning will alleviate the meal plan monotony that hit a few months back.  I’ve included new recipes with a mixture of old favorites hopefully leading to some level of comfort with the menu.  I tried to be seasonally conscious.  I tried not to heat up the kitchen too much in the planning for August and September.

And the kicker is, I’ve tried not to plan too much for weeks that I know will be busy.

There is a method to my madness, as the old bard once said.  I hope there is no madness in the method.

I’m very excited about this month’s menu!  I’ve always wanted to try huevos rancheros, and I never have.  I’m also excited about the carbonara, the praline bacon, and the chicken cheesesteak sandwiches.  Those are all out of my cooking comfy zone.

But the one dish I’m most hopeful about is the guacamole enchiladas.  When we go to Dallas and go to Abuelo’s, I always order the avocado enchiladas.  I hope these are just as yummy!

Meal Plan Monday: Hopefully This Will Be Followed a Bit Better This Week…

Meal Plan Monday

Last week’s menu did not go so well as planned.  Sometimes, things happen.  And, last week, things happened.  Or, rather, many things coalesced to make me not…want…to…cook.  I ate salads a lot last week.  It also is that lovely point in the year known as “It is way too hot to cook, thank you very much!”

It’s also way too hot to eat.  The heat index on concrete this evening as I headed home about five o’clock or so was 110 degrees Fahrenheit.  It is millimeters away from a hundred degrees actually.

There’s a reason why the slow cooker has again made successive appearances in the meal plan.  I’m not ready to do a full Please Don’t Heat Up the Kitchen New Recipe Challenge, but I’m going to find ways in the next few weeks (Louisiana in August is breathing its hot, acrid breath on the back of my neck already) to not heat up the kitchen as much as possible.

Saturday:  Fourth of July bash re-do with hamburgers, beans, potato salad, ice cream sundae bar, my mom’s cheesecake

Monday:  root beer pulled pork sandwiches (from RecipeGirl), coleslaw, chips (Um…this did not happen today.  I wasn’t hungry, Muffin ate leftovers, and Josh ate something else)

Tuesday:  Muffaletta casserole from Miz Helen’s, salad (I will hopefully be making the root beer pulled pork here)

Wednesday:  Chicken French (expect this one to be usurped as it was last week) from Ducks N a Row, rice, green veg

Thursday:  leftovers

Friday:  slow cooker red beans and rice, bread

Saturday:  fried rice

Sunday:  Crock Pot Coconut Lime Chicken (Crock Pot Gourmet), rice, appropriate veg

Meal Plan Monday: Back After a Week of Testing

For those of you not in the know, last week was PARCC testing.  Several other things happened this past week and a half to keep me from blogging as I wished to.   In my downtime at work (haha), I worked to plan lessons and also organize my meal planning lists.

Yes, I did plan (and mostly follow) a plan last week.  And I have a plan to go by for this week.  It’s a return of some old favorites mixed with some new fun. We have company this week; a friend of Josh’s is staying with us in between moves, so I’m trying to feed a crowd.  Here’s the plan:

Saturday:  cabbage roll casserole (from Mandy’s Recipe Box) and bread and butter

Sunday:  cream cheese and pepper jelly with crackers (raspberry jalapeno jam), crock pot chicken and dumplings (from the Slow Roasted Italian), artisan bread with rosemary, salad bar

Monday:  Root Beer Pulled Pork (from Recipe Girl) on a bun, coleslaw, chips

Tuesday:  sour cream noodle bake (from Life in the Lofthouse), green beans, leftover salad bar
