Happy April, everyone in the Pinteresting Blogosphere!

This week finds us back at school after spring break!  Yay!

I am trying a few newbie recipes that have inundated my email folder in recent months and that have colored my foodie imagination in my dreams.

Don’t you hate/love when that happens?!

But I will start us off with a bang!

Saturday:  Imperial Cathay-style Shredded Pork with Garlic Sauce, rice, eggroll

Sunday:  Smothered Chicken, rice, broccoli

Monday:  Baked Ravioli for Weeknights (Kraft Recipes), salad

Tuesday:  Fajita Rice (Lynn’s Kitchen Adventures), beans

Wednesday:  Cheesy Bacon Hasselback Potatoes (Kraft Recipes), salad

Thursday:  hot dogs or leftovers

Friday:  pizza

Saturday:  Creamy Chicken Casserole (Kraft), canned veg, bread

Sunday:  chicken and dumplins, cornbread, salad

Meal Plan Monday: Happy Cinco de Mayo!

Meal Plan Monday

Today marks Cinco de Mayo (as opposed to yesterday which was May the Fourth Be With You).  As a result (and since Josh did not ask to offer any input), we will be celebrating Cinco de Mayo a few times this week.  (Tex Mex and Mex are not Josh’s favorite ethnic varieties.)

Whereas I could probably eat some form of Tex Mex (because there are so many varieties and dishes) or even Cali-Mex every day, three meals a day, for the rest of my life and be okay.  My last trimester of pregnancy with Muffin I consumed Tex Mex three times a day pretty much every day (consuming leftovers for lunch and breakfast).

I think it’s important to recognize ethnic holidays in the meal plan, even if you are not of that ethnicity (and especially if it involves Mexican food or Tex Mex food).

Sunday (yesterday):  grilled hamburgers and corn

Monday (today):  tacos; avocado slices with salt, pepper, fresh lemon juice, and fresh lime juice; something resembling sangria

Tuesday:  nachos with leftover taco stuff (or canned chili)–Muffin has his 4-year checkup Tuesday!

Wednesday:  brinner (with dry-pan-fried ham and 2-Minute Frenchy Toasty Bread Pudding)

Thursday:  The Slow Roasted Italian’s Best Ever Grilled Margarita Chicken, chips and salsa (leftover avocado fun if there are any left from Monday-Tuesday)

Friday:  something pizza related

Saturday:  Crock Pot Honey Garlic Chicken, rice, veg

Sunday:  A roast of some kind, black eyed peas (from frozen), other veg, and bread of some kind

There, that’s three dishes!  I probably couldn’t have gotten away with four; Josh would have gotten suspicious.
