Meal Plan Monday: Muffin’s Birthday Week!

Good Monday morning, meal planners!

In honor of Muffin’s seventh birthday on Wednesday, here are seven classic photos of Muffin:

In lieu of going out to eat on his birthday, we instead took him to brunch yesterday, and I will be making his birthday dinner on Wednesday.  The only thing he asked for was macaroni and cheese, so I will be serving that with some chicken made infamous by the fact that Muffin once stole it off of my plate.  We will also have green beans (one o his favorite veggies).

So, how does the week shape out?  Here’s how:

Saturday:  I chaperoned the prom.  I snacked there.  Josh and Muffin had pizza leftover from his birthday party, I think.

Sunday:  grill

Monday:  hamburger helper, veg, bread

Tuesday:  fajita rice (Lynn’s Kitchen Adventures), chips, salsa

Wednesday:  Southern Buttermilk Fried Chicken (A Bountiful Kitchen), macaroni and cheese, green beans

Thursday:  leftovers or hot dogs

Friday:  pizza in some form

Saturday:  Asian Pork Lettuce Wraps (Fifteen Spatulas–triple the batch and freeze leftovers), egg rolls, soup from Chinese restaurant

Sunday:  Chicken in Basil Cream Sauce (Life in the Lofthouse), rice, green veg

Meal Plan Monday: Attempt to Make Some Planned Before and Ignored

Meal Plan Monday

This week, I return to attempting to try some dishes that I have planned to make before…then just didn’t.  I planned one several times with the best of intentions (Sweet Tea Fried Chicken), because, let’s face it, I live in the South, and it’s sweet tea and fried chicken.

I am also super excited about one recipe that I am trying this week:  Huevos Rancheros.  It’s one of those dishes I have always wanted to try…but haven’t.

Truly, I sound like the most boring scaredy-cat person ever with the above statements.  But this week, I am going to be bold!  I am going to give these recipes their due!  And that’s all there is to it!

Do all of those exclamations sound emphatic enough?

Also, today is my mom’s birthday!  (Happy birthday, Mom!)  I won’t say how old she is (although if she were still teaching, she would tell her students that she is 135 and that she was born in 1881), but if you send her the oh-so-appropriate (anniversary of her birth-wise) gift of diamonds, she might faint!

My mom’s lucky in that her birthday regularly falls on Labor Day weekend, and this year it falls on Labor Day itself.  (Happy Labor Day, by the way, to everyone else!)

So, what is on that lovely, luscious, delicious, have to try those underdog and unforgotten recipes meal plan?

Here’s what I plan:

Saturday:  Chicken Croquettes (Macaroni & Cheesecake), green veg, fruit

Sunday:  Cashew Sweet and Sour Pork (Our Best Bites), rice, egg roll

Monday:  Apricot Glazed Chicken with Dried Plums and Sage (Sticky, Gooey, Creamy, Chewy:  The site seems to be broken, so I will make the recipe and post an entry of it), rice, green veg

Tuesday:  Huevos Rancheros (adding crumbled chorizo) (Fifteen Spatulas), fruit

Wednesday:  Cap’n Crunch French Toast (Lick the Bowl Good), breakfast meat, fruit

Thursday:  leftovers or hot dogs

Friday:  pizza

Saturday:  Baked or Mashed Potato Soup (A Yummy Life), veggies and dip

Sunday:  Sweet Tea Fried Chicken (Growing Up Gabel), mashed potatoes, greens

We Plan Wednesday: The September 2015 Menu

We Plan Wednesday

When I sat down a few weeks ago and planned out the menu for the remainder of the year, I did so in an attempt to sketch out something useful for the remainder of 2015, knowing that once school started things were going to be busy.

Note that I said, “sketch.”  This monthly plan is not intended to be the end all and be all.  If I can’t manage to follow the weekly meal plan 100% of the time, I DEFINITELY can’t expect to do so for the monthly plan.  Life and poop happens.

That being said, I think this advance planning will alleviate the meal plan monotony that hit a few months back.  I’ve included new recipes with a mixture of old favorites hopefully leading to some level of comfort with the menu.  I tried to be seasonally conscious.  I tried not to heat up the kitchen too much in the planning for August and September.

And the kicker is, I’ve tried not to plan too much for weeks that I know will be busy.

There is a method to my madness, as the old bard once said.  I hope there is no madness in the method.

I’m very excited about this month’s menu!  I’ve always wanted to try huevos rancheros, and I never have.  I’m also excited about the carbonara, the praline bacon, and the chicken cheesesteak sandwiches.  Those are all out of my cooking comfy zone.

But the one dish I’m most hopeful about is the guacamole enchiladas.  When we go to Dallas and go to Abuelo’s, I always order the avocado enchiladas.  I hope these are just as yummy!
