Happy Fourth of July!  As you are reading this post, I (probably) am scurrying about the kitchen, prepping the fruit and veggie trays as well as the beans for supper tonight at my parents’.

In keeping with my most-popular post (I don’t get it!), I am again trying to eat by the daily themes.  Last week went really well, but I realized that we almost always follow the plan regardless on the whole.

Schezwan Saturday:  Crock Pot Cashew Chicken (Favorite Family Recipes), rice, veg and fruit tray

Sunday dinner:  20-40 Garlic Clove Slow Cooker Chicken (A Year of Slow Cooking), stuffing, peas

Fourth of July Monday:  hot dog bar, baked beans, veg tray, fruit tray

Taco Tuesday:  Beef Nacho Pie (Taste of Home), avocado salad, fruit

Friday:  pizza from Little Caesar’s

Saturday:  dinner in Dallas

Meal Plan Monday: After a Busy Weekend

Meal Plan Monday

This weekend was SUPER busy.  Muffin attended two birthday parties Saturday (a morning party of one of his best school friends and then, in the afternoon, the birthday party of one of this blog’s longtime readers as well as his visiting grandsons who are also friends of Muffin).  He had the best time at both and was EXHAUSTED when we arrived home.  Sunday was busily spent cleaning (Josh and Muffin) and meal-planning and shopping for the week.

This week presents a wrinkle in the plans.  Josh is working on-call for the next several days, so I am packing him lunch and supper every day through the Fourth.

(Note:  I apologize for the picture snafu in Thursday’s and Friday’s posts.  I am slowly learning how to finesse Google Photos–now that Picasa is all but defunct.  If you haven’t had a chance to see Friday’s entry in all its Muffin-glory, please check out below!)

Today, I hearken back to a previous entry, by-the-numbers my most popular post…the one that dealt with theme nights.  If you haven’t checked it out, you might like it.

So, what’s the plan?  Away we go!

Saturday:  party eats

Sunday:  grilled pork chops, grilled corn, golden honeydew (Josh made two suppers from the leftovers)

Monday:  (Mediterranean Monday) Quick and Easy Chicken Piccata (Debbiedoo’s), steamed broccoli, and fruit (probably cantaloupe and strawberries and blueberries)

Tuesday:  (Taco Tuesday) Beef Nacho Pie (Taste of Home), fruit

Wednesday:  (Waffle Wednesday meaning breakfast) Ham and Cheese Hashbrown Casserole (Mom on Timeout), fruit

Thursday:  leftovers or hot dogs (tradition)

Friday:  (Pizza Friday) Slow Cooker Pizza (Crockin Girls), corn

Saturday:  (Shezuan Saturday Asian Eats) Crock Pot Cashew Chicken (Favorite Family Recipes), rice, veg and fruit tray

Sunday:  (Sunday dinner) 20-40 Clove Slow Cooker Chicken (A Year of Slow Cooking), stuffing, peas

Meal Plan Monday: Grill Extra to Use in Other Recipes

Meal Plan Monday

Today, Muffin and I head back to school.  I tried to prep for this week as much as I possibly could.

Josh grilled chicken, smoked sausage, garlic bread, and russet potatoes on Sunday.  I used the leftover chicken for lunches and also for the jambalaya on Wednesday (also the leftover andouille).  I prepped the veggies for the tacos on Sunday, and made the slow cooker cashew chicken on Sunday, as well.

You will notice that some things made the menu again.  No, we didn’t serve them two weeks in a row.  Things went kinda crazy the last part of Spring Break, so those dishes got pushed to this week.

I’m trying to be a bit more organized in prepping Rene’s lunches, mine, and Josh’s.  So, I’m including my plan for those as well.

I begin with (drumroll-please):  the suppers for this week…

Saturday:  hot dog/pizza from Sam’s

Sunday:  grilled chicken, smoked sausage, grilled Texas Toast garlic bread, grilled “baked” potato

Monday:  Slow-Cooker Cashew Chicken from Favorite Family Recipes, rice, green beans

Tuesday:  Taco Tuesday, chips, and salsa

Wednesday:  Jambalaya, cornbread

Thursday:  leftovers or hot dogs

Friday:  Pizza Meatball Subs, chips

Saturday:  Caramelized Black Pepper Chicken (Just a Taste), rice, eggroll

Sunday:  Another Lazy Day Sunday Casserole (Kayotic Kitchen)

Lunches–Muffin:

Monday:  burger, chips, two chocolate chip cookies, apple, water

Tuesday:  pizza, fruit, fruit snacks, water

Wednesday:  taco (with toppings), juice, fruit snack

Thursday:  Lunchable (dessert included), juice, fruit snack

Friday:  hot dog, chips, fruit snack, juice

Lunches–Me:

Monday:  Diablo burger, chips, apple

Tuesday:  leftovers from grill (chicken or sausage, half potato), “tree” cookies

Wednesday:  leftover pizza (if any); if not, taco

Thursday:  leftover jambalaya

Friday:  hot dog

Lunches–Josh:

Monday:  burger, Doritos Mix chips (Free Friday Download from Kroger), apple

Tuesday:  leftovers from grill (chicken or sausage, half potato), Cadbury mini eggs

Wednesday:  leftover pizza or taco (or quesadilla)

Thursday:  leftover jambalaya

Friday:  hot dogs

Last week was unusual in that we followed the meal plan (pretty much).  I was so proud of myself for that.  I was not too proud for not getting the meal plan published and posted on here.  So, I thought I would share with you what happened (meal plan wise).

Saturday:  Cheese strata (recipe forthcoming)

Sunday:  dinner out (Asian buffet)

Monday:  Whataburger opened!  (Monterey Melt!  Onion Rings!  Root Beer!)

Tuesday:  Baked potato soup topped with green onion, bacon crumbles, and shredded cheese (semi-homemade using Campbell’s chunky soup)

Wednesday:  Slow Cooker Cashew Chicken from Favorite Family Recipes (post coming soon)

Thursday:  hot dogs and chips

Friday:  mini pizzas, corn

Saturday:  Slow Cooker Mongolian Beef (Six Sisters’ Stuff), rice, eggrolls

Sunday:  Honey Mustard Glazed Cranberry Pork Loin Roast, Stove Top stuffing, peas

We Plan Wednesday

I sat down last week and planned out the menus for the rest of the year.

Now, don’t get excited.  I haven’t completely lost my mind.  I simply saw my Chick-Fil-A calendar sitting on the table, pretty much blank, and felt the need to fill it (or, at least, August-December) with meal plans.

Now, do I honestly believe that all of these items for the remaining four months of the year will be made (and eaten) as planned?  Uh, no.

But a girl has to have a plan as the school year gets ready to gear up.  I can always fall back to the plan in the event things get crazy and my mind is fried as far as Meal Plan Monday is concerned.

The goal for August?  To heat up the oven as little as possible.

On the weekend of August 22, I plan to make Churro Chex Mix from Six Sisters’ Stuff.  On the weekend of August 29, I plan to make Star Crunches from Crock Pot Recipe Exchange.

This post is a bit of a cheat, as we are well into June and I posted a partial menu for my in-law’s visit that will occur toward the end of the month.  But, I decided to go ahead and fill in the post for the month.  July looms as one big question mark, as Josh may have one (or possibly even two?) weeks in Houston.

What is the advantage of monthly meal planning?  It’s one thing that you can check off of your weekly “to-do” list.  Does that mean I won’t do my Meal Plan Monday posts each week?  Uh, no.  Because if the meal plan gets shot to heck in a week, imagine what happens if I post it for the entire month!

June 1 (Monday):  Creamy Swiss Chicken Bake from Lil Luna (with alterations:  mozza instead of Swiss, cheddar instead of so much Parm), fresh green beans with onions and real bacon bits, rice

June 2 (Tuesday):  chicken tacos (from the slow cooker:  throw in a few breasts, some salsa, and taco seasoning and low until done and stir to shred)

June 3 (Wednesday):  “leftover Wednesday” in the form of chicken taco ‘topped taters

June 4 (Thursday):  something on the grill, canned veg, bread

June 5 (Friday):  mini pizzas, corn

June 6 (Saturday):  Smothered Chicken from Make Ahead Meals for Busy Moms, veg of some kind, mashed taters

June 7 (Sunday):  Chicken and Cornbread Casserole from Bread, Booze, and Bacon, salad with vinaigrette

June 8 (Monday):  Sesame Freaking Chicken (recipe given to me by my coworker Holly…and I am bound and determined to make it this time), egg rolls, rice, fortune cookies (maybe with a stir-fried veg)

June 9 (Tuesday):  Southern Buttermilk Fried Chicken (A Bountiful Kitchen), mashed potatoes, veg

June 10 (Wednesday):  Crock Pot Ranch Pork Chops (recipe all over the place), rice (maybe a wild rice blend), green veg

June 11 (Thursday):  leftovers or hot dogs (In theory, Josh is off–but on-call–so maybe grilled hot dogs?)

June 12 (Friday):  One Pot Pizza Pasta (Budget Savvy Diva), bread, salad

June 13 (Saturday):  Cheesy Chicken Tater Tot Casserole slow cooker (Country Cook), green veg

June 14 (Sunday):  Chicken French (Ducks N a Row), salad, rolls

June 15 (Monday):  slow cooker red beans and rice, salad, bread

June 16 (Tuesday):  Spasagna (Country Cook), salad

June 17 (Wednesday):  Cajun Fried Chicken Po’Boys (Favorite Family Recipes), baked fries

Meal Plan Monday: Pizza and Corn or Corn on Pizza?

In our family, we love pizza in all of its forms.  We love Pizza Meatball Subs.  We love mini pizzas.  We love pizza grilled cheese.

And, as a carryover from when I was growing up and lived with my parents, we have canned corn with our pizza.

I’m not sure what was the origin of the corn-with-pizza meal concept was, but it’s been that way for as long as I remember.  It was so much a given that I never thought anything of it…until my sister met her future husband.

My now-brother-in-law has never understood the corn with pizza thing.  Josh was kinda taken aback by it, as well.

And that forced me to think:  are we crazy for eating pizza with corn?

A week or so ago the question was answered to my satisfaction.  A coworker saw me eating the pizza rolls from a few weeks back with corn and hooted her approval.  She reminded me that the school district used to serve pizza with corn.  In fact, she went a step further and described how she used to cover her pizza with corn.

I’ll give you a moment to ponder that.

I HAVE GOT TO TRY IT!!!!

Seriously, this next Saturday when we have pizza, I have to try the corn on the pizza thing.

To me, my convo with her PROVES that pizza MUST be served with corn.

‘Nuff said.

So…here is the lovely menu for the week.  I’m continuing to try one-two new dishes a week.

Saturday:  spaghetti and meatballs using Slow Cooker Pizza Meatballs, green salad, bread

Sunday:  dinner at Horseshoe for Muffin’s birthday at The Spread Buffet

Monday:  Josh is off, so he will grill something.

Tuesday:  taco Tuesday (probably with The Lego Movie)

Wednesday:  20 Minute Pork Chop Rice One Pot Recipe (Call Me PMC), green vegetable

Thursday:  hot dogs or leftovers

Friday:  Crock Pot Cashew Chicken (Favorite Family Recipes), rice, eggrolls

Saturday:  Home-Alone-Inspired Filthy Animal Pizza (Foxes Love Lemons), corn! (maybe while viewing Home Alone)

Sunday:  pork loin roast in the slow cooker (using my mom’s method with potatoes, carrots, and onion)
