Yes.  This Meal Plan is all reflective of Josh being out of town and Muffin and I fending for ourselves Monday-Friday.  On Friday, he and I pack up and meet Josh in Dallas for a (hopefully) relaxing weekend.  So, this plan reflects that.

Saturday:  Barbecue Chicken French Bread from Buns in My Oven

Sunday:  Spasagna from Country Cook

Monday:  ham, macaroni and cheese, green veg

Tuesday:  leftovers from Sunday

Wednesday:  leftovers from Monday (notice a pattern?)

Thursday:  leftovers or hot dogs

Friday:  dinner in Dallas

Saturday:  dinner at the hotel

Sunday:  snacky dinner or dinner on the road

This week’s entry comes a bit late, but we are trying a whole messa’ recipes this week.  We are busily learning a poem for Muffin to present on Wednesday about the American flag.  Things are busy, busy, busy!

Sunday:  Chicken Parm Pasta Casserole (Adapted from Chicken Parm Meatball Casserole by Buns in My Oven)

Monday:  We ate leftovers of the Chicken Parm Pasta Casserole

Tuesday:  Ranch Chicken Enchiladas from Life in the Lofthouse, beans, rice

Wednesday:  Philly Cheese Steak Sloppy Joes from Dishing with Leslie, fries

Thursday:  Barbecue Chicken Bread from Buns in My Oven, salad

Friday:  Spasagna from Country Cook, salad

Saturday:  grilled something

Sunday:  baked ham, macaroni and cheese, green veg

I sat down last week and planned out the menus for the rest of the year.

Now, don’t get excited.  I haven’t completely lost my mind.  I simply saw my Chick-Fil-A calendar sitting on the table, pretty much blank, and felt the need to fill it (or, at least, August-December) with meal plans.

Now, do I honestly believe that all of these items for the remaining four months of the year will be made (and eaten) as planned?  Uh, no.

But a girl has to have a plan as the school year gets ready to gear up.  I can always fall back to the plan in the event things get crazy and my mind is fried as far as Meal Plan Monday is concerned.

The goal for August?  To heat up the oven as little as possible.

I also plan to make two dessert dishes for inclusion in Muffin’s lunches.

On the weekend of August 22, I plan to make Churro Chex Mix from Six Sisters’ Stuff.  On the weekend of August 29, I plan to make Star Crunches from Crock Pot Recipe Exchange.
