Last week, I was perusing several blogs, I came across a post on One Good Thing by Jillee. I misread the title, thinking that she had posted a recipe for Turtle Cream Puffs. Visions of caramel-ly, chocolatey, pecan-ny, cream puffy goodness danced in my head. And I found out I misread it. (It’s a beautiful post, by the way.)
Now I am obsessed with creating the image in my mind. A Turtle Cream Puff. A. Turtle. Cream. Puff. The vision now in my mind is a caramel-laced whipped cream with maybe a few grains of salt added in to make it a salted turtle cream puff. Pardon me while I drool. Piped into the top of a puff with the top dipped in chocolate to hide the piping hole. With a toasted pecan half (of a small pecan) pressed delicately into the chocolate-covered dome.

I Googled it, and Turtle Cream Puffs don’t seem to exist. And salted Turtle Cream Puffs definitely don’t seem to exist.
There is…of course…one tiny problem. Miniscule really. Almost nonexistent.
The thought of making a choux pastry recipe terrifies me! Yes, I’ve seen the episode of Good Eats entitled “Choux Shine.” I’ve read Joanne Fluke’s Cream Puff Murder. I’ve devoured dozens. But the thought of them not turning out terrifies me. And makes me sad.
